Distiller’s Comments: “This whisky charted its own course. Originally destined to be shared with you last Christmas, the small, fresh port casks I selected for finishing refused to be rushed; the whisky simply wasn’t ready to leave. Patience, and a further four months of maturation, gave it the breathing space to soften and unfold, revealing layers of dark sugar, dried fruit and lingering coffee. It’s finally time to set sail - it’s been well worth the wait.” - Will Dobson, Brewer & Distiller
Tasting Notes
Nose: maple syrup, rum & raisin ice cream and sticky prunes.
Taste: muscovado, marmalade, liquorice root and affogato.
Finish: luxurious coffee crema, chocolate cherries and tobacco.
Whisky: floor-malted heritage grains are hand-mashed, long fermented, copper pot distilled, matured and bottled in our distillery.
